Step 1 — For the Chicken
- 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and freshly ground black pepper to taste
Step 2 — For the Tuscan Sauce
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1.5 cups heavy cream
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese

Season and Sear Chicken
Season the pounded chicken breasts with Italian seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Sauté Aromatics
Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Cook for 1-2 minutes until fragrant.

Make Cream Sauce
Pour in the heavy cream and chicken broth. Whisk to combine, scraping up any browned bits from the bottom of the pan. Bring to a gentle simmer and cook for 3-5 minutes, or until the sauce thickens slightly.

Wilt Spinach & Add Cheese
Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Stir in the grated Parmesan cheese until melted and the sauce is smooth.

Return Chicken & Serve
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken. Simmer for another 1-2 minutes to heat through. Serve immediately, spooning extra sauce over the chicken.
