Step 1 — For the Chicken
- 4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
- 1 tbsp olive oil
- 1 tbsp butter
- Salt and freshly ground black pepper to taste
Step 2 — For the Tuscan Sauce
- 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
- 3 cloves garlic, minced
- 1.5 cups heavy cream
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning

Sear Chicken
Season chicken breasts generously with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 4-5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.

Sauté Aromatics
Add the chopped sun-dried tomatoes and minced garlic to the same skillet. Cook for 1-2 minutes until fragrant, scraping up any browned bits from the bottom of the pan.

Make Cream Sauce
Pour in the heavy cream and chicken broth. Bring to a simmer, then stir in the Italian seasoning and Parmesan cheese. Cook for 3-5 minutes, stirring, until the sauce thickens slightly.

Wilt Spinach
Stir in the fresh spinach and cook until just wilted, about 1-2 minutes.

Return the seared chicken breasts to the skillet, nestling them into the sauce. Spoon some sauce over the chicken. Simmer for another 1-2 minutes to heat through. Serve immediately.
