Ingredients
Step 1 — Make the queso
- 1 tbsp unsalted butter
- ½ small onion (finely diced)
- 1 jalapeño (seeded and minced)
- 2 garlic cloves (minced)
- 1 tbsp all-purpose flour
- 1 cup whole milk
- 8 oz white American or Velveeta cheese (cubed)
- 4 oz sharp cheddar (shredded)
- ½ tsp ground cumin
- ¼ tsp smoked paprika
- ½ tsp kosher salt
Step 2 — Serve
- Tortilla chips
- Diced tomatoes
- Fresh cilantro
- Pickled jalapeños
- Lime wedges

Cook the queso base
Melt butter in a saucepan over medium heat. Cook onion and jalapeño 3 minutes until soft. Add garlic 30 seconds. Stir in flour and cook 1 minute. Whisk in milk until smooth. Reduce heat to low.

Melt the cheese
Add American cheese and cheddar in batches, stirring until completely melted and silky. Stir in cumin, paprika, and salt. Thin with a splash of milk if needed.

Serve hot
Transfer to a warm bowl immediately. Top with tomatoes, cilantro, and pickled jalapeños. Serve with chips and lime wedges.
