Honey Glazed Pork Chops with Roasted Sweet Potatoes

Ingredients
Step 1 — For the Roasted Sweet Potatoes
- 1.5 lbs sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1/2 teaspoon cinnamon
- Salt and freshly ground black pepper to taste
Step 2 — For the Honey Glazed Pork Chops
- 4 (6 oz) boneless pork chops, about 1-inch thick
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1/4 cup honey
- 1 tablespoon Dijon mustard
- 1 tablespoon soy sauce (or tamari)

Roast Sweet Potatoes
Preheat oven to 400°F (200°C). Toss sweet potato cubes with 2 tablespoons olive oil, cinnamon, salt, and pepper on a baking sheet. Spread in a single layer and roast for 25-30 minutes, flipping halfway through, until tender and slightly caramelized.

Prepare Pork Chops
While potatoes roast, pat pork chops dry with paper towels. Season generously on both sides with salt and pepper.

Sear Pork Chops
Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear the pork chops for 2-3 minutes per side, until nicely browned. Remove chops from skillet and set aside.

Make Glaze and Finish Chops
In a small bowl, whisk together honey, Dijon mustard, and soy sauce. Pour the glaze into the skillet (careful, it might spatter) and bring to a simmer. Return the pork chops to the skillet, spooning glaze over them. Transfer the skillet to the preheated oven (alongside the sweet potatoes if possible) and cook for 5-8 minutes, or until pork chops are cooked through (internal temperature of 145°F/63°C). Baste with the glaze halfway through.

Serve
Let pork chops rest for a few minutes before serving with the roasted sweet potatoes. Spoon any extra glaze from the skillet over the chops.
