Ingredients
Step 1 — For the Pork and Apples
- 1.5 lb pork tenderloin
- 2 tablespoons olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- 2 medium apples (such as Honeycrisp or Fuji), cored and cut into 1-inch wedges
- 1 large red onion, cut into 1-inch wedges
- 1/4 cup apple cider (optional, for deglazing)

Preheat Oven and Prep Pork
Preheat oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels. Rub it all over with 1 tablespoon of olive oil, sage, thyme, salt, and pepper.

Sear Pork (Optional but Recommended)
Heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium-high heat. Sear the pork tenderloin on all sides until nicely browned, about 1-2 minutes per side. Remove pork from skillet and set aside.

Roast Apples and Onions
In the same skillet (or on a baking sheet if not using an oven-safe skillet), add the apple wedges and red onion wedges. Toss with a little extra olive oil, salt, and pepper. Arrange them around the skillet or on the baking sheet.

Roast Together
Place the seared pork tenderloin on top of or amongst the apples and onions. Transfer the skillet or baking sheet to the preheated oven. Roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C). The apples and onions should be tender and slightly caramelized.

Rest and Serve
Remove the skillet from the oven. Transfer the pork tenderloin to a cutting board and let it rest for 5-10 minutes before slicing. While the pork rests, you can deglaze the pan with a splash of apple cider if desired, scraping up any browned bits. Slice the pork and serve with the roasted apples and onions, drizzling any pan juices over the top.
