One-Pan Lemon Herb Roasted Salmon and Potatoes

Step 1 — For the Salmon and Potatoes
- 1.5 lbs baby potatoes, halved or quartered
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 4 (6 oz) salmon fillets
- 1 lemon, thinly sliced
- Fresh parsley, chopped (for garnish)

Preheat and Prep Potatoes
Preheat oven to 400°F (200°C). In a large bowl, toss the potatoes with olive oil, rosemary, thyme, garlic powder, salt, and pepper until evenly coated. Spread in a single layer on a large baking sheet.

Roast Potatoes
Roast the potatoes for 15-20 minutes, until they begin to soften and turn golden brown.

Add Salmon and Lemon
Push the potatoes to one side of the baking sheet. Place the salmon fillets on the empty side. Top each salmon fillet with a few lemon slices. Season the salmon with a pinch of salt and pepper.

Finish Roasting
Return the baking sheet to the oven and roast for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are tender and golden. Garnish with fresh parsley before serving.
