Sheet Pan Salmon with Roasted Broccoli and Potatoes
A simple and healthy weeknight meal featuring flaky salmon, tender roasted potatoes, and crisp broccoli, all cooked on one sheet pan.

Ingredients
Step 1 — For the Sheet Pan Meal
- 1 lb baby potatoes, halved or quartered
- 2 tbsp olive oil, divided
- 1 tsp dried rosemary
- 1 tsp garlic powder
- Salt and black pepper to taste
- 1 lb broccoli florets
- 4 (4-6 oz) salmon fillets
- 1 lemon, cut into wedges

Roast Potatoes
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. In a bowl, toss the potatoes with 1 tbsp olive oil, rosemary, garlic powder, salt, and pepper until evenly coated. Spread potatoes in a single layer on one half of the baking sheet. Roast for 15 minutes.

Prepare Broccoli
While potatoes roast, toss the broccoli florets with the remaining 1 tbsp olive oil, salt, and pepper in the same bowl (no need to wash). Season the salmon fillets with salt and pepper.

Add Broccoli and Salmon
After 15 minutes, remove the baking sheet from the oven. Add the seasoned broccoli florets to the empty half of the baking sheet, spreading them out. Place the salmon fillets amongst the potatoes and broccoli, skin-side down if applicable.

Continue Roasting
Return the baking sheet to the oven and roast for another 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, the potatoes are tender, and the broccoli is crisp-tender.

Serve
Serve the sheet pan salmon, potatoes, and broccoli immediately. Squeeze fresh lemon juice over everything before serving.
