Easy Baked Salmon with Roasted Broccoli and Lemon

Ingredients
Step 1 — For the Salmon and Broccoli
- 4 (6 oz) salmon fillets, skin on or off
- 1 lb broccoli florets
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and freshly ground black pepper to taste
- 1 lemon, thinly sliced

Preheat Oven & Prep Broccoli
Preheat your oven to 400°F (200°C). In a large bowl, toss the broccoli florets with 1 tablespoon of olive oil, garlic powder, salt, and pepper until evenly coated.

Arrange on Baking Sheet
Spread the seasoned broccoli in a single layer on a large baking sheet. Make space in the center for the salmon fillets.

Season Salmon
Pat the salmon fillets dry. Drizzle with the remaining 1 tablespoon of olive oil and season generously with salt and pepper. Place the salmon fillets on the baking sheet amongst the broccoli.

Add Lemon
Top each salmon fillet with 1-2 thin lemon slices.

Bake
Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp and slightly browned. Cooking time will vary depending on the thickness of the salmon.
