Step 1 — For the Pork
- 1.5 lb pork tenderloin
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper

- 1/2 cup apple cider
- 1/4 cup cranberry sauce (jellied or whole berry)
- 2 tbsp brown sugar
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar

Prep the Pork
Preheat oven to 400°F (200°C). Pat pork tenderloin dry with paper towels. Rub with olive oil, thyme, salt, and pepper.

Sear the Pork (Optional)
For a better crust, heat a oven-safe skillet over medium-high heat and sear the pork on all sides for 1-2 minutes per side. Transfer to a baking sheet if not using an oven-safe skillet.

Make the Glaze
In a small saucepan, whisk together apple cider, cranberry sauce, brown sugar, Dijon mustard, and apple cider vinegar. Bring to a simmer over medium heat, stirring until sugar dissolves and glaze thickens slightly, about 5 minutes.

Roast the Pork
Place pork on a baking sheet (or in the oven-safe skillet). Brush generously with half of the glaze. Roast for 20-25 minutes, or until internal temperature reaches 145°F (63°C). Brush with remaining glaze during the last 5 minutes of cooking.

Let the pork rest for 5-10 minutes before slicing. Serve with extra glaze if desired.
