Step 1 — For the Sheet Pan Meal
- 1.5 lbs smoked sausage (kielbasa or andouille), sliced into 1/2-inch rounds
- 1 lb small red or yellow potatoes, quartered
- 2 bell peppers (any color), cut into 1-inch pieces
- 1 large onion, cut into wedges
- 3 tbsp olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper to taste

Preheat and Prep Potatoes
Preheat oven to 400°F (200°C). In a large bowl, toss the quartered potatoes with 1.5 tbsp olive oil, Italian seasoning, garlic powder, salt, and pepper. Spread them in a single layer on a large baking sheet.

Roast Potatoes
Roast the potatoes for 20 minutes, until they begin to soften.

Add Sausage and Peppers
While potatoes roast, add the sliced sausage, bell pepper pieces, and onion wedges to the same bowl (no need to wash). Add the remaining 1.5 tbsp olive oil and toss to coat everything evenly. Season lightly with salt and pepper.

Continue Roasting
Add the sausage, peppers, and onions mixture to the baking sheet with the partially roasted potatoes. Stir everything together to distribute evenly. Return to the oven and roast for another 20-25 minutes, or until the sausage is browned, the vegetables are tender, and the potatoes are fully cooked and slightly crispy.
