Sheet Pan Pork Tenderloin with Apples and Sweet Potatoes

Step 1 — For the Pork and Veggies
- 1 pork tenderloin (about 1.25 lbs)
- 2 medium sweet potatoes, peeled and cubed
- 2 apples (like Honeycrisp or Fuji), cored and cut into wedges
- 1 red onion, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Salt and black pepper to taste

Preheat and Prep Pan
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Prepare Sweet Potatoes
In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, pepper, smoked paprika, cinnamon, and nutmeg. Spread them on one side of the prepared baking sheet.

Roast Sweet Potatoes
Roast the sweet potatoes for 15 minutes.

Prepare Pork and Apples/Onions
While the sweet potatoes roast, pat the pork tenderloin dry. Rub it with the remaining 1 tablespoon of olive oil, salt, and pepper. In the same bowl (no need to wash), toss the apple wedges and red onion wedges with a pinch more salt and pepper. Add the pork tenderloin, apple wedges, and red onion wedges to the baking sheet with the partially roasted sweet potatoes. Arrange in a single layer.

Finish Roasting
Return the baking sheet to the oven and roast for another 20-25 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the sweet potatoes are tender and caramelized. Let the pork rest for 5 minutes before slicing. Serve the sliced pork with the roasted apples, onions, and sweet potatoes.
