Labskaus
Northern Germany's hearty sailor's hash — corned beef, potatoes, and beets mashed together, topped with a fried egg and Rollmops herring. Bold, briny, and utterly satisfying.

Ingredients
Step 1 — Labskaus base
- 1 lb corned beef (cooked, finely chopped)
- 1½ lbs potatoes (peeled, boiled)
- 1 cup pickled beets (drained, diced)
- 1 small onion (finely diced)
- 3 tbsp butter
- Salt and pepper
- Pinch of allspice
Step 2 — Toppings
- 4 eggs
- 4 Rollmops herring fillets
- Gherkins (sliced)
- Parsley (chopped)

Mash the Labskaus
Sauté onion in butter until soft. Mash potatoes with corned beef, beets, and onions. Season with salt, pepper, and allspice. Keep warm in a skillet, pressing into a crust on the bottom.

Fry the eggs
Fry eggs sunny-side up in butter until whites are set and yolks are runny.

Serve
Plate a generous scoop of Labskaus, top with a fried egg, Rollmops herring, gherkins, and parsley. Serve with rye bread.
