- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder

Boil Potatoes
Wash potatoes thoroughly. Place them in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are fork-tender but not falling apart. Drain well.

Smash and Season
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Arrange the boiled potatoes on the prepared baking sheet, leaving some space between them. Using the bottom of a glass or a potato masher, gently smash each potato until it's about 1/2 inch thick, exposing some of the fluffy interior.

Drizzle the smashed potatoes generously with olive oil. Sprinkle with salt, black pepper, garlic powder, and fresh herbs (if using). Bake for 20-25 minutes, or until deeply golden brown and very crispy. For extra crispiness, you can broil for the last 2-3 minutes, watching carefully to prevent burning. Serve immediately.
