Pork Menudo
A Filipino tomato-based pork stew with potatoes, carrots, bell peppers, and raisins. A fiesta favorite that tastes even better the next day.

Ingredients
Step 1 — Sauté and simmer
- 2 lbs pork shoulder (cubed)
- 2 tbsp vegetable oil
- 1 onion (diced)
- 4 garlic cloves (minced)
- 1 can (8 oz) tomato sauce
- 2 cups water
- 2 bay leaves
Step 2 — Add vegetables
- 2 potatoes (cubed)
- 1 carrot (cubed)
- 1 bell pepper (diced)
- ½ cup raisins
- ½ cup green peas
- 2 tbsp soy sauce
- Salt and pepper to taste
Step 3 — Serve
- Steamed white rice

Brown the pork
Heat oil in a pot. Brown pork cubes on all sides. Add onion and garlic, cook 2 minutes. Add tomato sauce, water, and bay leaves. Simmer covered 30 minutes.

Add vegetables
Add potatoes and carrots, simmer 10 minutes. Add bell pepper, raisins, peas, and soy sauce. Cook 5 more minutes until everything is tender. Season to taste.

Serve over steamed white rice.
