Step 1 — For the Cod
- 4 (6 oz) cod fillets
- 2 tbsp olive oil
- 1/4 cup Panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 tsp dried parsley
- 1/2 tsp garlic powder
- Salt and freshly ground black pepper to taste
- Lemon wedges, for serving

Preheat Oven & Prep Fish
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup. Pat the cod fillets dry with paper towels.

Prepare Crust Mixture
In a small bowl, combine Panko breadcrumbs, grated Parmesan cheese, dried parsley, garlic powder, salt, and pepper. Stir to mix well.

Coat Cod
Brush the top of each cod fillet with olive oil. Press the Panko-Parmesan mixture firmly onto the oiled top of each fillet, creating an even crust.

Place the coated cod fillets on the prepared baking sheet. Bake for 12-15 minutes, or until the cod is opaque and flakes easily with a fork, and the crust is golden brown and crispy. Cooking time will vary based on fillet thickness.
