Spicy Jeyuk Bokkeum
Fiery stir-fried pork in a gochujang marinade with onions and carrots. A weeknight staple that's spicy, sweet, and begging to be eaten with rice.

Ingredients
Step 1 — Marinate the pork
- 1.5 lbs pork shoulder or belly (thinly sliced)
- 3 tbsp gochujang
- 1 tbsp gochugaru
- 2 tbsp soy sauce
- 1 tbsp brown sugar
- 1 tbsp rice wine
- 1 tbsp sesame oil
- 4 garlic cloves (minced)
- 1 tbsp grated ginger
Step 2 — Stir-fry and serve
- 1 medium onion (sliced)
- 1 carrot (julienned)
- 2 green onions (sliced)
- 1 tbsp vegetable oil
- Steamed white rice
- Lettuce leaves (optional)

Marinate
Combine pork with gochujang, gochugaru, soy sauce, sugar, rice wine, sesame oil, garlic, and ginger. Marinate at least 15 minutes.

Stir-fry
Heat oil in a wok over high heat. Add pork and stir-fry 5–6 minutes. Add onion and carrot, cook 3–4 minutes until pork is cooked and vegetables are tender-crisp.

Serve
Garnish with green onions. Serve over steamed rice or wrapped in lettuce leaves.
