- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

- 4-6 whole wheat pita breads
- 1 cup tzatziki sauce
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup chopped red onion
- Feta cheese, crumbled (optional)

Marinate Chicken
In a bowl, combine chicken cubes with olive oil, lemon juice, minced garlic, oregano, thyme, dill, salt, and pepper. Toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Air Fry Chicken
Preheat your air fryer to 400°F (200°C). Thread the marinated chicken pieces onto small skewers (soak wooden skewers in water for 30 minutes if using). Place skewers in the air fryer basket in a single layer, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through, until the chicken is cooked through and lightly browned.

Warm Pitas
Gently warm the pita breads in the air fryer for 1-2 minutes, or in a dry skillet, until pliable.

Stuff each warm pita with the cooked Greek chicken skewers (removing from skewers if preferred), a generous dollop of tzatziki sauce, chopped cucumber, tomatoes, and red onion. Sprinkle with feta cheese if desired. Serve immediately.
