Air Fryer Lemon Herb Chicken Skewers with Zucchini

Ingredients
Step 1 — For the Chicken and Zucchini Skewers
- 1.5 lbs boneless, skinless chicken thighs or breast, cut into 1-inch cubes
- 2 medium zucchini, cut into 1-inch chunks
- 1 red onion, cut into 1-inch chunks
- Wooden or metal skewers (soak wooden skewers in water for 30 min)
Step 2 — For the Lemon Herb Marinade
- 1/4 cup olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tbsp dried parsley
- 1 tsp salt
- 1/2 tsp black pepper

Marinate Chicken
In a bowl, combine olive oil, lemon juice, minced garlic, oregano, parsley, salt, and pepper. Add the cubed chicken and toss to coat. Let marinate for at least 15 minutes (or up to 2 hours in the refrigerator).

Assemble Skewers
Thread marinated chicken cubes, zucchini chunks, and red onion pieces alternately onto the skewers. Discard any leftover marinade.

Air Fry Skewers
Preheat air fryer to 400°F (200°C). Arrange skewers in the air fryer basket in a single layer, working in batches if necessary. Cook for 12-15 minutes, turning the skewers halfway through, until the chicken is cooked through and lightly browned, and the vegetables are tender.

Serve the chicken and zucchini skewers hot. Garnish with fresh parsley or a squeeze of extra lemon juice if desired.
