Ingredients
Step 1 — For the Pork Medallions
- 1.5 lbs pork tenderloin, trimmed and cut into 1-inch thick medallions
- 1 tbsp olive oil
- Salt and black pepper to taste
Step 2 — For the Honey Dijon Glaze
- 3 tbsp Dijon mustard
- 2 tbsp honey
- 1 tbsp apple cider vinegar
- 1 tsp dried thyme

Prepare Pork
Pat the pork tenderloin medallions dry with paper towels. Toss them with olive oil, salt, and pepper.

Make Glaze
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and thyme until well combined.

Coat Pork
Brush about half of the honey Dijon glaze generously over both sides of the pork medallions.

Air Fry Pork
Arrange the glazed pork medallions in a single layer in the air fryer basket. Cook at 400°F (200°C) for 8-10 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C) for medium (recommended).

Glaze and Rest
Remove the pork from the air fryer. Brush with the remaining glaze. Let the pork rest for 5 minutes before serving.
