Ingredients
Step 1 — For the Shrimp Scampi
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup dry white wine (or chicken broth)
- 2 tbsp lemon juice
- 1/4 tsp red pepper flakes
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
Step 2 — For the Zucchini Noodles
- 3 medium zucchini, spiralized
- 1 tsp olive oil

Prepare Zucchini Noodles
Spiralize the zucchini. In a bowl, toss the zucchini noodles with 1 tsp olive oil, salt, and pepper. Set aside.

Air Fry Shrimp
In a bowl, toss the shrimp with 3 tbsp olive oil, minced garlic, white wine, lemon juice, red pepper flakes, salt, and pepper. Add the shrimp in a single layer to the air fryer basket (you may need to cook in batches). Cook at 400°F (200°C) for 5-7 minutes, until pink and opaque.

Combine
Remove the air fryer basket. Add the prepared zucchini noodles directly into the basket with the cooked shrimp. Toss gently to combine.

Finish Cooking
Cook for an additional 1-2 minutes at 400°F (200°C) to lightly warm the zucchini noodles and allow them to absorb some of the sauce. Do not overcook, or they will become mushy.

Stir in the fresh parsley and serve immediately.
