Ingredients
Step 1 — For the Shrimp
- 1.5 lbs large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/4 cup chopped fresh parsley
- Salt and black pepper to taste
- 1 lemon, cut into wedges for serving
Step 2 — For the Zucchini Noodles
- 3 medium zucchinis, spiralized
- 1 teaspoon olive oil
- Pinch of salt

Prepare Zucchini Noodles
Spiralize the zucchinis. In a bowl, toss the zucchini noodles with 1 teaspoon olive oil and a pinch of salt. Set aside.

Prepare Shrimp
Pat the shrimp dry. In a bowl, toss the shrimp with 1 tablespoon olive oil, minced garlic, lemon zest, parsley, salt, and pepper until evenly coated.

Air Fry Shrimp
Preheat air fryer to 400°F (200°C). Place the seasoned shrimp in a single layer in the air fryer basket. Cook for 6-8 minutes, shaking halfway through, until the shrimp are pink and opaque.

Combine and Serve
While the shrimp cooks, briefly warm the zucchini noodles in a skillet with a tiny bit of oil or in the microwave for 1-2 minutes until slightly tender but still al dente. Drain any excess liquid. Toss the cooked shrimp with the zucchini noodles. Serve immediately with lemon wedges.
