Ingredients
Step 1 — For the Salmon and Sauce
- 4 (6 oz) salmon fillets, skin removed if desired
- 1 tbsp olive oil
- 1 shallot, finely minced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes (oil-packed), drained and chopped
- 1.5 cups heavy cream or half-and-half
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 3 cups fresh spinach
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Optional: Red pepper flakes for heat
Instructions
- 1
Sear Salmon
Pat salmon fillets dry and season with salt and pepper. Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear salmon for 2-3 minutes per side until golden brown. Remove salmon from skillet and set aside.
- 2
Sauté Aromatics
Reduce skillet heat to medium. Add minced shallot and cook until softened, about 3 minutes. Add minced garlic and chopped sun-dried tomatoes, cook for 1 minute more until fragrant. Add Italian seasoning and red pepper flakes (if using).
- 3
Create Cream Sauce
Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer. Stir in the heavy cream (or half-and-half) and Parmesan cheese. Simmer gently for 3-5 minutes until the sauce begins to thicken slightly.
- 4
Wilt Spinach
Add the fresh spinach to the sauce, stirring until it wilts down. Season the sauce with salt and pepper to taste.
- 5
Return Salmon and Finish
Gently nestle the seared salmon fillets back into the sauce in the skillet. Spoon some sauce over the top of the salmon. Cover the skillet and simmer gently for 5-8 minutes, or until the salmon is cooked through and flakes easily. Alternatively, place the skillet under a broiler for 2-3 minutes to lightly brown the top of the salmon.

Serve
Serve the salmon immediately with the creamy Tuscan sauce spooned over the top. Pairs well with crusty bread or pasta.
