- 2 medium sweet potatoes, peeled and diced (about 1/2-inch cubes)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (or to taste)
- Salt and black pepper to taste
- Optional: 1/4 cup chopped fresh cilantro for garnish

Cook Sweet Potatoes
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced sweet potatoes and cook, stirring occasionally, until they are tender and slightly browned, about 10-12 minutes. Remove from skillet and set aside.

Brown Ground Beef
Add the ground beef to the same skillet (drain excess fat if necessary). Cook, breaking it up with a spoon, until browned. Drain any excess grease.

Sauté Vegetables
Add the chopped onion and red bell pepper to the skillet with the beef. Cook until softened, about 5-7 minutes. Stir in the minced garlic, chili powder, smoked paprika, cayenne pepper, salt, and black pepper. Cook for 1 minute more until fragrant.

Combine and Finish
Return the cooked sweet potatoes to the skillet. Stir everything together to combine and heat through for another 2-3 minutes.

Serve the hash hot, garnished with fresh cilantro if desired. Top with a fried or poached egg, avocado slices, and hot sauce for an extra boost of flavor and protein.
