Sheet Pan Sausage and Sweet Potato Hash with Eggs
A complete and satisfying meal made entirely on one sheet pan. This savory hash combines flavorful sausage, sweet potatoes, and kale, topped with perfectly cooked eggs.

Ingredients
Step 1 — For the Hash
- 1 lb chicken or turkey sausage, sliced into 1/2-inch rounds
- 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes
- 1 red onion, cut into wedges
- 1 bunch kale, stems removed and leaves roughly chopped
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper to taste

Preheat and Prep Pan
Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.

Roast Sweet Potatoes and Sausage
In a large bowl, toss the diced sweet potatoes with 1 tbsp olive oil, smoked paprika, garlic powder, salt, and pepper. Spread evenly on the baking sheet. Roast for 15 minutes.

Add Onion and Sausage
Add the sliced sausage and red onion wedges to the baking sheet with the sweet potatoes. Drizzle with the remaining 1 tbsp olive oil and toss to combine. Return to the oven and roast for another 10 minutes.

Add Kale and Make Wells for Eggs
Stir in the chopped kale and toss with the hash ingredients. Create four small wells in the hash mixture using the back of a spoon. Crack one egg into each well.

Bake Eggs
Return the baking sheet to the oven and bake for 5-8 minutes more, or until the egg whites are set but the yolks are still runny (or cooked to your preference).
