A mild, nutty Thai-Muslim curry with tender beef, potatoes, and peanuts in a fragrant spiced coconut sauce. Sweet, savory, and deeply comforting.

Ingredients
Step 1 — Curry paste and beef
- 2 tbsp massaman curry paste
- 1 lb beef chuck (cubed)
- 1 can (14 oz) coconut milk
- 2 cups beef broth
- 2 tbsp fish sauce
- 2 tbsp palm sugar
- 2 tbsp tamarind paste
Step 2 — Vegetables and peanuts
- 2 medium potatoes (cubed)
- 1 medium onion (wedged)
- ¼ cup roasted peanuts
- 2 bay leaves
- 4 cardamom pods (optional)
Step 3 — Serve
- Jasmine rice
- Fried shallots (optional)
- Fresh cilantro

Brown and simmer beef
Fry curry paste in coconut cream until fragrant. Add beef and brown lightly. Pour in remaining coconut milk and broth.

Slow simmer
Add fish sauce, sugar, tamarind, bay leaves, and cardamom. Simmer covered 1½ hours until beef is tender.

Finish
Add potatoes and onion. Cook 20 minutes until potatoes are soft. Stir in peanuts. Serve over jasmine rice.
