Quick Beef and Broccoli Noodles

Ingredients
Step 1 — For the Beef and Marinade
- 1 lb flank steak or sirloin steak, thinly sliced against the grain
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1 tsp sesame oil
Step 2 — For the Stir-Fry
- 2 tbsp vegetable oil, divided
- 1 lb broccoli florets
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger
Step 3 — For the Sauce
- 1/3 cup soy sauce
- 1/4 cup beef broth
- 2 tbsp brown sugar
- 1 tbsp cornstarch
- 1 tsp rice vinegar
Step 4 — For Serving
- 8 oz dried egg noodles or ramen noodles
- Sesame seeds, for garnish (optional)

Marinate Beef
In a medium bowl, combine the thinly sliced beef with 2 tbsp soy sauce, 1 tbsp cornstarch, and 1 tsp sesame oil. Toss to coat and let marinate for at least 10 minutes while you prepare the other ingredients.

Prepare Sauce
In a small bowl, whisk together 1/3 cup soy sauce, beef broth, brown sugar, 1 tbsp cornstarch, and rice vinegar until smooth.

Cook Noodles and Beef
Cook noodles according to package directions. Drain and toss with 1 tsp of vegetable oil to prevent sticking. While noodles cook, heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and sear for 1-2 minutes per side until browned but still slightly pink inside. Remove beef from skillet and set aside.

Stir-Fry Broccoli
Add the remaining 1 tbsp vegetable oil to the skillet. Add the broccoli florets and stir-fry for 3-4 minutes until crisp-tender. Add the minced garlic and grated ginger and stir-fry for 30 seconds more until fragrant.

Combine and Thicken
Pour the prepared sauce into the skillet with the broccoli. Bring to a simmer, stirring constantly, until the sauce thickens, about 1-2 minutes. Return the cooked beef to the skillet and add the cooked noodles. Toss everything together to coat well and heat through.

Serve immediately, garnished with sesame seeds if desired.
