Ingredients
Step 1 — For the Skillet
- 1 tbsp olive oil
- 1 lb smoked sausage (like kielbasa), sliced
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can cannellini beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 tsp dried Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley, for garnish

Sauté Aromatics
Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned, about 5-7 minutes. Remove sausage with a slotted spoon and set aside, leaving drippings in the skillet.

Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

Add the rinsed cannellini beans, diced tomatoes (with their juice), chicken broth, Italian seasoning, salt, and pepper to the skillet. Stir to combine.

Bring the mixture to a simmer, then reduce heat to medium-low. Return the browned sausage to the skillet. Cover and cook for 10-15 minutes, allowing flavors to meld and the sauce to thicken slightly.
