Ingredients

- 1 tbsp olive oil
- 1 lb lean ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can black beans, rinsed and drained
- 1 (14.5 oz) can diced tomatoes with green chilies, undrained
- 1 cup frozen corn
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded cheddar cheese (or Mexican blend)

- Sour cream or Greek yogurt
- Chopped cilantro
- Salsa
- Avocado slices

Brown Turkey
Heat olive oil in a large oven-safe skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess grease.

Sauté Aromatics
Add the chopped onion to the skillet with the turkey and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

Add Beans and Tomatoes
Stir in the rinsed black beans, diced tomatoes with green chilies (undrained), frozen corn, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.

Sprinkle the shredded cheese evenly over the top of the mixture. Cover the skillet and cook for 2-3 minutes, or until the cheese is melted and bubbly.
