Step 1Cook the pork and broth

  • 2 lbs pork shoulder (cut into chunks)
  • 1 lb pork neck bones or spare ribs (optional, for depth)
  • 2 cans (29 oz each) hominy (drained and rinsed)
  • 1 medium onion (halved)
  • 6 garlic cloves
  • 2 bay leaves
  • 1 tbsp dried oregano
  • 2 tsp kosher salt
  • 10 cups water or chicken broth

Step 2Make the red chile sauce

  • 6 dried guajillo chiles (stemmed and seeded)
  • 2 dried ancho chiles (stemmed and seeded)
  • 3 garlic cloves
  • ½ medium onion
  • 1 tsp cumin
  • 1 tsp dried oregano

Step 3Garnishes

  • 2 cups shredded green cabbage
  • 1 cup radishes (thinly sliced)
  • ½ cup diced white onion
  • Fresh cilantro
  • Lime wedges
  • Dried oregano
  • Tostadas or tortilla chips
