In the order you use them

Step 1Grind the masala

  • ½ cup grated coconut (fresh or frozen)
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 4 dried red chilies
  • ½ tsp fenugreek seeds
  • 1 tsp turmeric
  • ¼ cup water

Step 2Make the curry

  • 2 tbsp coconut oil
  • 1 medium onion (sliced)
  • 2 green chilies (slit)
  • 15 curry leaves
  • 2 medium tomatoes (chopped)
  • 1 tbsp tamarind paste
  • 1½ cups water
  • 1 tsp salt
  • 1½ lbs firm white fish fillets (cut into pieces)

Step 3Serve

  • Steamed rice
  • Papadum
  • Lime wedges
