- 1 pound lean ground beef
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 1 large sweet potato (about 1.5 lbs), peeled and diced into 1/2-inch cubes
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 cup beef broth

Brown Beef
Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up, until browned. Drain off most of the excess fat.

Sauté Aromatics and Sweet Potato
Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more. Add the diced sweet potato, chili powder, cumin, cayenne pepper (if using), salt, and black pepper. Stir well to coat.

Add the rinsed black beans, diced tomatoes (undrained), and beef broth to the skillet. Stir everything together. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the sweet potatoes are tender, stirring occasionally.

Taste and adjust seasoning with salt and pepper as needed. If the mixture is too thick, add a splash more broth or water.
