Ingredients
Step 1 — Simmer the chutney
- ½ cup tamarind paste or concentrate
- 1 cup water
- ½ cup brown sugar or jaggery
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp ground ginger
- ¼ tsp cayenne pepper
- 1 tsp kosher salt

Simmer
Whisk tamarind with water in a saucepan. Add sugar, cumin, coriander, ginger, cayenne, and salt. Simmer 10–15 minutes until thickened and glossy.

Cool and serve
Cool completely — the chutney will thicken as it cools. Serve with samosas, pakoras, or drizzle over chaat. Keeps refrigerated up to 2 weeks.
