Air Fryer Black Bean Burgers

Ingredients
Step 1 — For the Black Bean Burgers
- 1 (15-ounce) can black beans, rinsed, drained, and patted very dry
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped bell pepper (any color)
- 1 large egg, lightly beaten
- 1 tsp cumin
- 1/2 tsp chili powder
- Salt and black pepper to taste

Mash Beans
In a medium bowl, mash about three-quarters of the black beans with a fork or potato masher until mostly smooth but still slightly chunky. Add the remaining whole beans and gently mix.

Combine Ingredients
Add the breadcrumbs, chopped red onion, chopped bell pepper, beaten egg, cumin, chili powder, salt, and pepper to the bowl with the mashed beans. Mix gently until just combined. Do not overmix.

Form Patties
Divide the mixture into 4 equal portions and form into patties, about 3/4-inch thick. If the mixture is too sticky, add a tablespoon more breadcrumbs at a time.

Air Fry
Preheat air fryer to 370°F (185°C). Lightly spray the air fryer basket with olive oil. Place the patties in the basket in a single layer. Spray the tops of the patties lightly with olive oil spray. Cook for 15 minutes, flipping halfway through, until golden brown and firm.

Serve the black bean burgers on buns with your favorite toppings like lettuce, tomato, onion, avocado, or a favorite sauce.
