- 2 medium sweet potatoes (about 1.5 lbs), peeled and diced into 1/2-inch cubes
- 1 medium red onion, chopped
- 1 green bell pepper, chopped
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional)

In a large bowl, combine the diced sweet potatoes, chopped red onion, and chopped green bell pepper. Add the sliced sausage.

Drizzle the olive oil over the ingredients in the bowl. Sprinkle with smoked paprika, garlic powder, cayenne pepper (if using), salt, and black pepper. Toss well to ensure everything is evenly coated.

Air Fry - First Stage
Preheat air fryer to 380°F (190°C). Add half of the mixture to the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through.

Add the remaining half of the mixture to the air fryer basket. Cook for another 10-15 minutes, shaking the basket occasionally, until the sweet potatoes are tender and slightly caramelized, and the sausage is browned.
