Ingredients
Step 1 — For the Base
- 1 lb lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup beef broth
Step 2 — For the Topping
- 2 medium potatoes (about 1 lb), peeled and thinly sliced (1/8 inch)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- 1
Cook Beef Mixture
Preheat air fryer to 370°F (185°C). In a skillet over medium heat, brown the ground beef with the chopped onion until the beef is no longer pink. Drain off excess fat. Stir in minced garlic, chili powder, cumin, salt, and pepper. Cook for 1 minute more until fragrant. Pour in beef broth and simmer for 5 minutes, stirring occasionally.
- 2
Prepare Potato Slices
While beef mixture simmers, thinly slice the potatoes. You can soak them in cold water for 10 minutes and pat dry to remove excess starch if desired.
- 3
Assemble Bake
In an air fryer-safe baking dish (that fits snugly in your basket), spread the ground beef mixture evenly. Layer the thinly sliced potatoes over the beef mixture. Sprinkle both shredded cheeses evenly over the potatoes.
- 4
Air Fry
Carefully place the baking dish into the preheated air fryer basket. Cook for 20-25 minutes, or until the potatoes are tender and the cheese is melted and bubbly. Check potatoes with a fork for doneness.
