Ingredients
Step 1 — For the Meatloaf Muffins
- 1 lb ground beef (80/20 recommended)
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 egg, lightly beaten
- 1/4 cup finely chopped onion
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup ketchup (for topping)
Step 2 — For the Mashed Potato Topping
- 2 cups prepared mashed potatoes (store-bought or homemade)

Prepare Meatloaf Mixture
In a large bowl, gently combine ground beef, breadcrumbs, milk, beaten egg, chopped onion, Worcestershire sauce, salt, and pepper. Do not overmix. Divide the mixture evenly among 6 cups of a greased standard muffin tin.

Top with Ketchup
Spread a thin layer of ketchup over the top of each meatloaf mixture portion in the muffin cups.

Air Fry Meatloaf Muffins
Preheat air fryer to 350°F (175°C). Carefully place the muffin tin into the air fryer basket (ensure it fits securely). Cook for 20-25 minutes, or until the meatloaf is cooked through (internal temperature 160°F/71°C) and the tops are slightly glazed.

Add Mashed Potato Topping
Remove the muffin tin from the air fryer. Top each meatloaf muffin with a dollop of prepared mashed potatoes. Return the tin to the air fryer and cook for another 5-7 minutes, or until the mashed potatoes are heated through and lightly golden.

Let the muffins cool slightly before carefully removing them from the tin. Serve warm.
