Ingredients
Step 1 — For the Pork Bites
- 1 lb pork tenderloin, cut into 1-inch cubes
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/2 teaspoon grated fresh ginger
Step 2 — For the Sweet and Sour Sauce
- 1/4 cup ketchup
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon pineapple juice (optional)
- 1 teaspoon cornstarch

- Sesame seeds
- Chopped green onions

Marinate Pork
In a bowl, combine pork cubes with 1 tbsp soy sauce, 1 tbsp cornstarch, sesame oil, and grated ginger. Toss to coat evenly. Let marinate for at least 10 minutes.

Make Sauce
In a small saucepan, whisk together ketchup, rice vinegar, brown sugar, 1 tbsp soy sauce, pineapple juice (if using), and 1 tsp cornstarch. Heat over medium-low heat, stirring constantly, until the sauce thickens slightly. Set aside.

Air Fry Pork
Preheat air fryer to 400°F (200°C). Place pork bites in a single layer in the basket. Cook for 10-12 minutes, shaking the basket halfway through, until pork is cooked through and lightly browned.

Combine and Glaze
Remove pork from the air fryer. Pour the prepared sweet and sour sauce over the pork bites and toss gently to coat.
