Ingredients
Step 1 — For the Pork Medallions
- 1.5 lb pork tenderloin, trimmed of silver skin
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Prepare Pork
Cut the pork tenderloin into 1-inch thick medallions. Pat them dry with paper towels.

Season Pork
In a bowl, toss the pork medallions with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. Ensure each piece is well-coated.

Air Fry
Preheat air fryer to 400°F (200°C). Arrange the seasoned pork medallions in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.

Cook Pork
Cook for 10-12 minutes, flipping halfway through, until the internal temperature reaches 145°F (63°C) for medium-rare to medium. Cooking time will vary based on thickness.

Rest and Make Sauce (Optional)
Remove pork from the air fryer and let it rest on a plate for 5 minutes. If making the sauce, pour the chicken broth into the (cooled) air fryer basket or a small saucepan, add butter, and heat gently until butter melts and broth is warm. Swirl to combine.

Serve the pork medallions drizzled with the optional pan sauce, or with your favorite side dish.
