- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

Preheat Air Fryer
Preheat your air fryer to 400°F (200°C).

Make Meatball Mixture
In a medium bowl, gently combine ground chicken, panko breadcrumbs, beaten egg, minced garlic, soy sauce, grated ginger, salt, and pepper. Do not overmix. Form the mixture into approximately 1-inch meatballs.

Arrange the meatballs in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through, until the meatballs are cooked through (internal temperature of 165°F/74°C) and lightly browned.

While the meatballs are cooking, combine honey, soy sauce, rice vinegar, minced garlic, and grated ginger in a small saucepan over medium heat. Bring to a simmer, then stir in the cornstarch slurry. Cook, stirring, until the sauce thickens slightly, about 1-2 minutes.
