Cut sausage into 1-inch pieces. Chop bell peppers and onion into similar-sized pieces. Ensure all pieces are roughly uniform for even cooking.

In a bowl, combine the sausage pieces, bell peppers, and onion. Drizzle with olive oil, then sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to coat everything evenly.

Preheat air fryer to 380°F (190°C). Place the sausage and vegetable mixture in the air fryer basket in a single layer (work in batches if necessary). Cook for 12-15 minutes, shaking the basket halfway through, until the sausage is cooked through and lightly browned, and the vegetables are tender-crisp.
