Ingredients
Step 1 — For the Skewers
- 1 lb pre-cooked chicken or turkey sausage, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Step 2 — Optional Marinade
- 2 tablespoons balsamic glaze
Instructions
- 1
Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Thread sausage pieces, bell peppers, red onion, and cherry tomatoes onto the skewers, alternating ingredients.
- 2
Season Vegetables
In a bowl, toss the assembled skewers with olive oil, Italian seasoning, garlic powder, salt, and pepper until evenly coated.
- 3
Air Fry
Preheat air fryer to 375°F (190°C). Place skewers in the air fryer basket in a single layer, working in batches if necessary to avoid overcrowding. Cook for 12-15 minutes, flipping halfway through, until vegetables are tender-crisp and sausage is heated through and lightly browned.
- 4
Glaze (Optional)
If desired, brush the cooked skewers with balsamic glaze during the last minute of cooking or just before serving.
- 5
Serve
Serve hot, perhaps with rice or a simple side salad.
