Step 1 — For the Skillet
- 1 lb Italian sausage (mild or hot), cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium zucchini, cut into 1-inch chunks
- 1 small red onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp dried Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper to taste

In a large bowl, combine the sausage pieces, bell pepper pieces, zucchini chunks, and red onion wedges.

Drizzle the olive oil over the ingredients. Sprinkle with Italian seasoning, garlic powder, salt, and pepper. Toss well to coat everything evenly.

Air Fry - Stage 1 (Sausage)
Preheat air fryer to 400°F (200°C). Add the sausage pieces to the air fryer basket in a single layer. Cook for 8-10 minutes, shaking halfway, until browned.

Air Fry - Stage 2 (Add Veggies)
Add the seasoned vegetables to the air fryer basket with the partially cooked sausage. Cook for another 10-12 minutes, shaking occasionally, until the vegetables are tender-crisp and slightly charred, and the sausage is fully cooked through.

Serve the Italian sausage and vegetable mixture hot. It can be served on its own, over rice, pasta, or in a hoagie roll.
