Step 1 — For the Chicken and Potatoes
- 1 lb boneless, skinless chicken thighs, cut into 1.5-inch pieces
- 1 lb baby potatoes, quartered
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper to taste

- 3 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon apple cider vinegar

Prepare Potatoes
In a bowl, toss the quartered baby potatoes with 1 tablespoon of olive oil, garlic powder, salt, and pepper. Ensure they are evenly coated.

Air Fry Potatoes
Preheat air fryer to 400°F (200°C). Place the seasoned potatoes in the air fryer basket in a single layer. Cook for 15 minutes, shaking the basket halfway through.

Prepare Chicken and Glaze
While potatoes cook, toss the chicken pieces with the remaining 1 tablespoon of olive oil, salt, and pepper. In a small bowl, whisk together Dijon mustard, honey, soy sauce, and apple cider vinegar for the glaze.

Add Chicken and Cook
After the potatoes have cooked for 15 minutes, add the seasoned chicken pieces to the air fryer basket with the potatoes. Cook for another 10-12 minutes, or until the chicken is cooked through and the potatoes are tender and crispy. Shake the basket occasionally.

Remove the basket from the air fryer. Pour the honey mustard glaze over the chicken and potatoes and toss gently to coat. Return to the air fryer for 1-2 minutes to allow the glaze to set. Serve hot.
