Ingredients

- 2 cans (15 oz each) salmon, drained and bones removed
- 1/2 cup panko breadcrumbs
- 1/4 cup finely chopped fresh parsley
- 2 tablespoons finely chopped fresh dill
- 1 tablespoon lemon zest
- 1 large egg, lightly beaten
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray

Prepare Salmon
Ensure the canned salmon is well-drained. Remove any remaining small bones. Flake the salmon into a medium bowl using a fork.

Mix Ingredients
Add panko breadcrumbs, parsley, dill, lemon zest, beaten egg, Dijon mustard, garlic powder, salt, and pepper to the bowl with the flaked salmon. Gently mix everything together until just combined. Do not overmix.

Divide the mixture into 8 equal portions and gently shape them into patties, about 3/4 inch thick. Be careful not to pack them too tightly.

Air Fry Patties
Preheat air fryer to 380°F (190°C). Lightly spray the air fryer basket with cooking spray. Place the salmon patties in a single layer in the basket (cook in batches if necessary).

Cook for 10-12 minutes, carefully flipping halfway through, until golden brown, firm, and heated through. Ensure internal temperature reaches 165°F (74°C) if using fresh salmon, though canned is already cooked.
