Ingredients
Step 1 — For the Stuffed Peppers
- 4 large bell peppers (any color), tops removed and seeded
- 1 lb Italian sausage (mild or hot), casings removed
- 1 cup cooked rice (white or brown)
- 1/2 cup marinara sauce
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- Salt and black pepper to taste
- 1/4 cup shredded mozzarella cheese (optional, for topping)

Prepare Peppers
Cut the tops off the bell peppers and remove the seeds and membranes. You can blanch the peppers in boiling water for 3-5 minutes if you prefer them very tender, then pat dry.

Cook Sausage
In a skillet over medium heat, cook the Italian sausage, breaking it up with a spoon, until browned and cooked through. Drain off any excess grease.

Make Filling
In a bowl, combine the cooked sausage, cooked rice, marinara sauce, Parmesan cheese, oregano, salt, and pepper. Mix well.

Stuff Peppers
Spoon the sausage mixture evenly into the prepared bell peppers, packing it gently. If using, top with shredded mozzarella cheese.

Air Fry Peppers
Preheat air fryer to 370°F (185°C). Place the stuffed peppers upright in the air fryer basket. Cook for 25-30 minutes, or until the peppers are tender and the filling is heated through and lightly browned. Check halfway through and adjust time if needed.

Carefully remove the stuffed peppers from the air fryer and serve hot.
