Step 1 — For the Zucchini Fritters
- 2 medium zucchinis, grated (about 3 cups)
- 1 teaspoon salt (for drawing out moisture)
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, lightly beaten
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 teaspoon black pepper
- Olive oil spray
Step 2 — For the Garlic Yogurt Dip
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill (optional)
- Salt and pepper to taste

Prepare Zucchini
Place the grated zucchini in a colander, sprinkle with 1 teaspoon salt, and let sit for 15 minutes to draw out moisture. Squeeze the zucchini very dry using your hands or a cheesecloth.

Make Fritter Batter
In a medium bowl, combine the squeezed zucchini, flour, Parmesan cheese, egg, parsley, minced garlic, and black pepper. Mix until just combined. Do not overmix.

Air Fry Fritters
Preheat air fryer to 400°F (200°C). Form the zucchini mixture into small patties (about 2 inches wide). Lightly spray both sides of the patties with olive oil spray. Place patties in the air fryer basket in a single layer (cook in batches if necessary). Cook for 12-15 minutes, flipping halfway through, until golden brown and crispy.

Make Dip
While fritters are cooking, combine Greek yogurt, minced garlic, lemon juice, dill (if using), salt, and pepper in a small bowl. Stir well.

Serve the hot zucchini fritters immediately with the garlic yogurt dip.
