- 1 lb spicy Italian sausage, casings removed
- 1 large sweet potato (about 1.5 cups), peeled and diced into 1/2-inch cubes
- 1 bell pepper (any color), diced
- 1/2 red onion, diced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and black pepper to taste

Prepare Ingredients
In a bowl, combine the diced sweet potato, bell pepper, and red onion. Add olive oil, chili powder, cumin, salt, and pepper. Toss to coat evenly.

Cook Sausage
Place the sausage meat in the air fryer basket. Cook at 400°F (200°C) for 8-10 minutes, breaking it up with a spatula halfway through, until browned and cooked through. Drain off excess grease and transfer the cooked sausage to a bowl.

Air Fry Vegetables
Add the seasoned sweet potato mixture to the air fryer basket (use the same basket, no need to clean). Cook at 400°F (200°C) for 15-20 minutes, shaking the basket every 5 minutes, until the sweet potatoes are tender and slightly browned.

Combine and Serve
Add the cooked sausage back to the air fryer basket with the vegetables. Toss to combine. Cook for another 2-3 minutes to heat everything through. Serve hot, topped with fried eggs, avocado, or cilantro if desired.
