Bratwurst with Sauerkraut

Ingredients
Step 1 — Braise the sauerkraut
- 2 lbs sauerkraut (drained, rinsed if very sour)
- 1 medium onion (sliced)
- 1 apple (grated)
- 1 cup dry white wine
- 1 cup chicken broth
- 2 bay leaves
- 6 juniper berries
- 1 tbsp caraway seeds
- 2 tbsp brown sugar
- 2 tbsp butter
Step 2 — Cook the bratwurst
- 8 fresh bratwurst links (about 1 lb)
- 1 tbsp vegetable oil
- 1 cup beer (optional, for simmering)
Step 3 — Serve
- Crusty Brötchen or mustard rolls
- Dijon and sweet mustard
- Mashed potatoes (optional)

Braise the sauerkraut
Melt butter in a large pot. Sauté onion until soft. Add sauerkraut, apple, wine, broth, bay leaves, juniper, caraway, and brown sugar. Simmer covered 30–40 minutes, stirring occasionally, until tender and flavorful.

Cook the bratwurst
Prick sausages lightly. Simmer in beer or water 10 minutes, then grill or pan-fry over medium heat until browned and cooked through, about 8 minutes total.

Serve
Nestle bratwurst on a bed of warm sauerkraut. Serve with mustard, crusty rolls, and mashed potatoes if desired.
