Budae Jjigae
Army stew — a spicy kimchi broth loaded with sausage, spam, baked beans, ramen noodles, and melted cheese. A post-war fusion dish that's chaotic, cheesy, and utterly delicious.

Ingredients
Step 1 — Build the broth
- 2 cups kimchi (chopped)
- 1 tbsp gochujang
- 1 tbsp gochugaru
- 1 tbsp soy sauce
- 4 cups chicken or anchovy broth
- 4 garlic cloves (minced)
- 1 tsp sugar
Step 2 — Add the mix-ins
- 4 oz spam (sliced)
- 4 Korean sausages or hot dogs (sliced)
- ½ can (7 oz) baked beans
- 4 oz firm tofu (cubed)
- 2 green onions (sliced)
- 1 cup shredded cheddar or mozzarella
- 1 package instant ramen noodles (discard seasoning packet)
- ½ medium onion (sliced)

Simmer the broth
In a large pot, combine kimchi, gochujang, gochugaru, soy sauce, broth, garlic, and sugar. Bring to a boil and simmer 10 minutes.

Add proteins
Add spam, sausage, baked beans, tofu, and onion. Simmer 8 minutes until everything is heated through.

Finish with ramen and cheese
Add ramen noodles and cook 3 minutes. Top with cheese and green onions. Serve bubbling hot directly from the pot.
