Ingredients

- 1 lb ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp dried oregano
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese (or a Mexican blend)

Brown Turkey
Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain off any excess fat.

Sauté Aromatics
Add the chopped onion to the skillet and cook until softened, about 4-5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

Add Remaining Ingredients
Stir in the rinsed black beans, diced tomatoes (undrained), chili powder, cumin, oregano, salt, and pepper. Bring the mixture to a simmer, stirring to combine.

Reduce heat to low. Sprinkle the shredded cheese evenly over the top of the skillet mixture. Cover the skillet and cook for 5 minutes, or until the cheese is completely melted and bubbly.
